Stuffed Squid Recipe & Cooking Directions

First, clean the calamari. Remove the head and separate the tentacles. Also, remove the spine inside it and remove the skin as well. Then rinse the calamari thoroughly under cold running water and pat dry with absorbent kitchen paper.

Now, transfer the tentacles to a cutting board and finely chop them with a knife. In a large bowl, mix them well with the breadcrumbs and then add the egg. Season with a pinch of salt, chopped parsley, and a generous drizzle of extra virgin olive oil.

Mix everything to get a homogeneous mixture. Then, fill the calamari using a spoon; the filling should not reach the edge. Otherwise, it will fall out during cooking. Seal the ends well with a wooden toothpick. Continue this until all the filling is used up.

In a large pan, drizzle extra virgin olive oil liberally and brown the garlic lightly. Now arrange the calamari and let them brown for a few moments, turning them occasionally. Then, add the tomato puree.

Stir well to distribute it evenly. Season with a teaspoon of salt and add a cup of hot water. Cover with a lid and cook on low flame for about 40 minutes. When it is cooked, flavor it with chopped parsley.
